This dish was so filling and satisfying, made with simple ingredients!
This dish took about 45 minutes all together (Mainly because of cooking the rice) I used a cup and a half of fully cooked white rice in this dish to serve 5 people. Make your rice by its own instructions.
Dice an onion and slice half a red and half a yellow bell pepper. Followed by slicing your Kielbasa, be sure to remove the metal clip that holds the kielbasa in its horse shoe shape beforehand!!
In a well oiled pan over medium high heat, brown your kielbasa slices for a few minutes before removing from the pan. In that same oil, throw in your sliced pepper and diced onion. Cook until soft and season with salt and pepper, when done add in a tablespoon of garlic and continue cooking for one extra minute. Remove veggies and put to the side.
In the same pan, add in 3/4 cup chicken broth and 5 tablespoons tomato paste. Stir and add in a teaspoon each of chili powder and paprika. Stir, and add in your fully cooked rice, followed by your kielbasa and vegetables. Finally, add in another 3/4 cup chicken broth and combine well and cook for another minute. Serve and eat immediately.
NOTE: If you wanted to season a little extra with more chili powder and paprika than suggested, you should. It really brought out the sweetness of the caramel in our Kielbasa.
Instructions
Cook the Rice
Cook the white rice separately according to its instructions. Set aside 1.5 cups of cooked rice.
Prepare Ingredients
Dice the onion. Slice the red and yellow bell peppers. Slice the kielbasa, removing the metal clip first.
Brown the Kielbasa
Heat oil in a pan over medium-high heat. Add the kielbasa slices and cook until browned. Remove from the pan and set aside.
Cook the Vegetables
In the same pan, add the onion and peppers. Cook until soft. Season with salt and pepper. Add garlic and cook for 1 more minute. Remove and set aside.
Make the Sauce
In the same pan, add 3/4 cup chicken broth and tomato paste. Stir to combine, then add chili powder and paprika.
Combine Everything
Add the cooked rice, kielbasa, and vegetables back into the pan. Mix well.
Finish Cooking
Add the remaining 3/4 cup chicken broth. Stir to combine and cook for another minute until heated through.
Serve
Serve immediately. Adjust seasoning with additional chili powder and paprika if desired.
