Preheat Oven
Preheat oven to 325°F.
Prepare the Marinade
In a bowl, combine garlic, caraway seeds, paprika, salt, pepper, and white wine. Mix well.
Marinate the Pork Chops
Place the pork chops in an ovenproof casserole dish. Pour the marinade over the chops. Cover and refrigerate for 2–3 hours.
Bake the Pork Chops
Remove from refrigerator and place uncovered in the oven. Bake for about 1 hour or until tender. Add more wine if needed during cooking.
Prepare the Sauce
Remove the pork chops from the oven. Stir sour cream into the pan juices and heat gently. Do not boil.
Serve
Serve the pork chops topped with the sour cream gravy. Pair with buttered noodles or dumplings if desired.
